The origin of its pecorino cheese is also worthy of mention. The pecorino comes from an area above Rome, provided by the same farmers who supply the Osteria da Fortunata restaurants in Italy. Each cheese wheel is hand-salted, an old and physically demanding procedure that goes back generations, to keep its taste as consistent as possible with tradition.

Osteria da Fortunata does not take any shortcuts when it comes to its oil either. There’s no difference between the oil on the tables and the cooking oil. There is only room for high-quality, extra virgin Italian olive oil, no matter the dish.

As for the main trade with which these Roman wanderers made their name—pasta making—the dough is entirely worked by hand. (Processed egg whites in cartons are banished from this kitchen!) The staff breaks fresh eggs on the spot and mixes them with flour to make pasta dough. Hungry customers can watch busy cooks stand side by side at the restaurant’s pasta station, stretching and cutting those balls of dough until finely made fettuccine, tagliolini, gnocchi, and ravioli take shape before their eyes.
